How about a healthy festive flavorful holiday appetizer for your next gathering??
Ingredients:
- 1 whole wheat loaf (cut into 1" cubes)
- 4 cups coarsely chopped cherry tomatoes
- 5 tbsp of olive oil
- 1 1/2 tbsp chopped fresh basil (or dried if not available)
- 1 tsp rock salt
- 1 tsp fresh cracked pepper
Directions:
- In a large bowl, mix chopped tomatoes, salt, pepper, basil, and 2 tbsp of olive oil. Let rest in fridge for 1-2 hrs to allow flavors to blend.
- After tomato mixture has fully rested. Preheat oven to 375 F.
- Toss chopped bread in 3 tbsp of olive oil. Spread bread evenly on a cookie sheet.
- Cook in oven for 10-15 minutes until bread is crispy.
- Serve bread warm and bruschetta cold. Enjoy!
This is a good size appetizer for 6-8 people.
